Corbenic Camphill Community Bakery

 bread...'

 

In some ways,
 the Corbenic Bakery
 is the beating heart
 of our community.

 

The logistics
 and statistics
 are very
impressive...

 



In
the morning,
Thomas and
his team
bake
tea-break rolls
for the other workshops
and the  five houses.

 

 

 

Ten or twelve loaves are baked for each house daily, Monday to  Friday;

Mostly loaves are baked
to European sour-dough recipes...

 

In the afternoon, the focus switches to confectionery; biscuits and cakes; all organically-made, nutritious and quite delicious....

Again, the numbers are high; circa 150;  not surprising given the size of our community...

Four residents
work in the
morning
shift

 

 

Three in the afternoon session.

Skills learned include
 
  mixing dough by hand
  
 shaping loaves
  
 rolling out dough
    measuring out flour
 
  use the weighing machine
   

Plus a range of supervised
kitchen tasks like using the ovens...




Biscuits between 10 and
20 minutes.
The bread bakes in around 50 minutes; buns in around 20 minutes.

 

The cakes take around 50 minutes to bake.

 


 

We use the finest of organic  flours and natural  ingredients.

 

The Corbenic bakery can serve the local market too.


 

Our busiest time of the year
 is our Advent Market Open Day.
 

The team will bake up to 200 loaves which will go on sale to the general public...

We sell our range of bakery goods at the monthly farmers' market in Stirling and a local market at Logierait, near Pitlochry.
